Session uses the Signal protocol and lets you choose your own server, not relying on Signal’s centralized one: https://getsession.org/

Matrix is probably the most-used alternative, also you get to choose your own server, but the project has been criticized for having a culture focused on growth/glitz over security.

https://tox.chat/ may be the best alternative pursuing its own development path: peer-to-peer no servers strictly needed at all. No iOS app yet though.

https://scuttlebutt.nz/ is also peer-to-peer, probably harder to use / buggier in my experience though i haven’t tried Tox yet so maybe it’s no better!
